Forged Kitchen Knives Vs Stamped Kitchen Knives

The myth all starts with the idea that forged blades are inherently better than stamped blades. The first heat treatment starts at 1400-1900 degrees Fahrenheit, leaving the steel brittle but very hard. The second heat treatment hits the blades at 400-700 degrees reducing both the brittleness and the hardness, but in turn making more durable blades.

As you can see the manufacturing processes are just different which leads to different knives. The forged blades tend to be much softer than the stamped or machined blades, because of the lack of high heat treatment. The benefits to this are that it's much easier to sharpen at home, the knife will have a weightier feel, and you'll have a bolster. The drawbacks are that it won't be quite as sharp as a comparable stamped blade, and it won't hold a comparable edge as long. The Germans who are the primary manufacturers using the forged method rectify this by sharpening to a 22 degree angle instead of a 16 degree used by most stamped manufacturers.

The stamped or machined blade benefits and drawbacks are in reverse of the forged. You'll have a much lighter knife with no bolster, unless welded on, that's extremely sharp, and durable. You may also have a harder time sharpening it at home.

In the end it all comes down to you the consumer, and which knife fits you the best. If you're going to be slicing a lot of heavy vegetables and meats you may find the German forged Wusthof knives to your preference. On the other hand if you do a lot of Asian style cooking the high end stamped Global knives or Shun knives may fit you best.

Feeling the pinch of the economy and glaring into my near empty wallet, I knew I needed to shop around! I was skeptical to pick up a set at just under 0. I did some research and decided to give them a try. It was truly shocking to get such a high quality set of knives. The Ginsu Stainless Steel Knife Set came complete with its 12 pieces and a bamboo knife block.

Each knife was razor sharp with traditional Japanese Style handles! They definitely didn't look like I'd only spent a hundred bucks and I was happy to recommend them to my friends and co-workers! As well the sleek look sat amazingly well on my modern counter top!

These Ginsu Knives Have a Great Quality Weight, Strength and Balance

Pulling the blades from the block gives a satisfying swishing sound! Turning over the bale and it can be seen that the steel tang extends firmly down the entire length of the handle. This makes for a very sturdy and balanced feel in the hand! For being a 'cheap' stainless knife set, they are amazingly light and comfortable to use! These are very sharp knives with smooth cutting.

A well balance knife will make the cutting work easier and any of the knives in this set are a pleasure to work with. They're also sharp enough to mark your counter if you're not careful so be sure you work with these knives on a cutting board.

A Great Performing Knife on Small and Large Cutting Jobs

Starting with little jobs the knives performed well. Slicing and dicing through vegetables and fruits with ease! But how would the big dogs perform? I'd had a small set of Cutco blades so I knew what a sharp blade felt like!

Each graduating blade impressed me more than the last as I slashed through chicken, more veggies, and even frozen hamburger. The Ginsu Knives performed really well and never seemed to snag!

Stainless Steel and Rust Resistant Knives

My favorite part about the Ginsu Chikara Knife Set is that they are Stainless Steel and Rust Resistant! Meaning: I sometimes I just don't feel like hand washing everything! Who does? My Ginsu knives can be thrown right on the top shelf of the dishwasher!

It's recommend to let them air dry and also be sure to watch little hands when unloading the Ginsu knives from the dishwasher! The Ginsu Stainless blades are heat and rust resistant.

With every pro there is a con and these knives are no exception! I have found with dish washing the blades can become dull and flat. Best recommendation: Dab a little bit of olive oil onto a napkin and wipe down the handle. Be sure to wipe away any excess that may have been left on the handle and these knives are as good as new!

Steel kitchen knives can really become more of a hassle than they're worth. Blades can go dull in what seems like only a few uses, and constant re-sharpening is a potentially expensive annoyance. This process ultimately creates a new compound that maintains the sharpness and hardness of the ceramic while also significantly increasing its strength. These knives are much more durable, removing the primary limitation of using Kyocera ceramic knives.

Another advantage of ceramic knives is that they are chemically inert. This means that there's no chance of a chemical reaction affecting the way your food will taste - you'll never end up with an odd metallic taste or the like. Furthermore, the blade is resistant to germs, making for a safer meal. Finally, salts, acids and oils don't wear down ceramic blades, making them last longer than their steel counterparts.

An additional advantage to Kyocera ceramic knives is that they are extremely lightweight, making them exceptionally easy and enjoyable to handle. Combined with the sharpness and durability, the weight of these knives makes preparing various dishes easier than ever before, and also reduces fatigue when doing a lot of cutting.
